Dirty Martini Cheese Dip
This dirty martini cheese dip combines Galbani® Ricotta, Parmesan, blue cheese, olives, and capers in a creamy, savory spread. The olives, capers, and olive brine give the dip the unmistakable flavors of a dirty martini, while the cheeses create a smooth, rich base. Served chilled with pita chips or crackers, it makes a unique appetizer for cocktail hour or entertaining.

15 oz. Galbani® Ricotta Cheese

1/4 cup Galbani® Grated Parmesan Cheese

3/4 cup crumbled blue cheese

8 oz. jar green olives with pimentos; drained and chopped. Reserve juice.

2 Tbsp. small capers
-
1/8 tsp. black pepper

1/8 tsp. garlic powder or one chopped garlic clove

Pita chips or crackers
Combine all ingredients and mix well with a spoon or spatula. Add some olive juice or even some vodka if it needs to be thinned out a bit.
Chill for an hour.
Serve with pita chips or crackers.
Spread this dip on a chicken cutlet and bake for a beautifully cheesy and salty topping.
