Ricotta Mashed Potatoes with Fresh Herbs

4 Yukon Gold potatoes, peeled and cut into chunks

1/2 cup Galbani® Ricotta Cheese

1/4 cup heavy cream (more if needed)

2 Tbsp. salted butter

2 Tbsp. extra virgin olive oil

2 cloves garlic, minced
-
1 Tbsp. fresh parsley, chopped
-
1 Tbsp. fresh chives, chopped
-
1 tsp. fresh thyme, chopped
-
Salt and black pepper, to taste

1-2 Tbsp. of additional melted butter on top
Place the potatoes into a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until potatoes are fork-tender. Drain the water and return the potatoes to the pot.
Stir in the ricotta cheese, butter, and oil. Mix together until fully incorporated.
Pour in the heavy cream, garlic, herbs, and salt and pepper.
Using a potato masher, mash the potatoes until completely smooth.
Spoon the mashed potatoes into a serving dish and pour the melted butter on top.
Garnish with any extra herbs and enjoy!
