Fresh & Toasty Turkey Panini

Directions

Mix together whole grain mustard and mayonnaise.

Spread 1 Tbsp. mustard/mayo mix on each of 4 bottom slices of bread.

Lay 2 slices of turkey, then 2 slices of Mozzarella on each. Top each with ¼ cup of arugula.

Spread 1 Tbsp. of fig spread on each of the 4 top slices of bread. Lay fig-spread side down on top of each sandwich.

Spread softened butter on outside of top and bottom slices of bread.

Place in panini press and cook until golden brown and cheese is melted.

Cut sandwiches in half and serve.

Tips

If you don’t have a panini press, don’t fret! You can easily toast the sandwich on a regular pan like a grilled cheese.
