Cook bacon at 400 degrees F in oven until crisp (approx. 15 minutes). Remove and set aside.
Whisk milk and eggs in a bowl until smooth. Mix in sugar, cinnamon, and vanilla.
Preheat a skillet to medium heat, add butter to coat the pan and prevent sticking.
Dip bread slices in batter one at a time and add to hot pan. Cook on both sides until golden brown.
Place all 8 French toast slices on a large cutting board. Spread ricotta cheese on 4 of the slices and add 3 bacon strips to each.
Spread orange marmalade on the other 4 slices and place on top of the ricotta-bacon slices.
Place the 4 stacks on a baking sheet and bake in oven at 400 degrees F for 3-5 minutes to warm the cheese and crisp the toast.
Remove and plate. Top with syrup and sliced jalapeños.
Make this dish even better by adding a sunny side up egg.
