Porchetta con Mozzarella

3/4 cup Galbani® Mozzarella Cheese, hand shredded

1 pound pork tenderloin

1 Tbsp. fennel seed

1 tsp. dried dill
-
½ tsp. crushed red pepper flakes
-
1 tsp. garlic powder
-
½ tsp. black pepper
-
½ tsp. salt
-
1 cup fresh spinach, chopped
-
3 toothpicks
-
1 stick butter
-
1 fresh lemon, zest
-
Salt and pepper, to taste
Slice three-quarters of the way through the pork loin the long way to open it up.
Cover with plastic wrap and pound out to make the pork thinner.
Combine the dry seasonings into a small bowl and use half to season the pork.
Add spinach and shredded mozzarella.
Roll up pork and use toothpicks to hold closed.
Place on a baking sheet lined with foil and sprinkle the rest of the seasoning on top.
Bake in the oven at 400 degrees F for 15-20 minutes.
Remove when internal temperature is 165 degrees F.
Remove pork from the oven and let rest 5 minutes.
In a small pan, melt butter and add lemon zest.
Slice pork 1-2” thick on an angle and spoon lemon-butter sauce over it.
Serve over rice, with mashed potatoes or your favorite pasta.
