Prepare Avocado Smash. Cut each avocado down the center, remove pit. Squeeze a wedge of lemon on the cut avocado to avoid browning. In a bowl, smash avocados with a fork. Add dried ingredients plus another squeeze of lemon. Salt and pepper to taste. Set aside.
Prepare Arugula salad. Place arugula in a bowl. Add a splash of olive oil plus a dash of salt and pepper and a squeeze of lemon. Set aside.
Remove Presliced grilling cheese from packet. Brush each side of cheese with olive oil. Follow cooking directions on packet.
Cut roll in half. Brush with olive oil. Place on hot grill, cook about 3 minutes, or until desired.
Assemble the sandwich: start with the roll. Place avocado smash on roll. Followed by a slice of grilling cheese. Top grilling cheese with some arugula salad. Add a dollop of bruschetta. Enjoy!
